- 1 cup pitted dates
- 1 cup shredded, unsweetened coconut
- 1/3 cup semi-sweet or dark chocolate (I use dairy-free, refined-sugar free)

- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- flaky sea salt (for topping)
Instructions
- Soften the dates: Place the dates in a bowl and cover with boiling water. Let soak for about 10 minutes, then drain well.
- Toast the coconut: While the dates are soaking, add the shredded coconut to a pan. Cook over medium heat, stirring frequently until lightly golden brown. Remove from heat and let cool.
- Make the dough: Add the drained dates and toasted coconut to a food processor. Blend until a sticky, uniform dough forms. Tip: If using, add the vanilla and salt at this stage.
- Shape the cookies: Scoop 1–2 tablespoons of dough and roll into balls. Place on a parchment-lined tray, then flatten into cookies. Use your finger or a straw to create a small hole in the center for the classic Samoa shape.
- Chill until firm: Transfer the tray to the freezer and chill for at least 1 hour, or until the cookies are firm.
