Tips for the Best Lemon Ice Cream

A few small tips will help ensure perfect texture and flavor.

Use full-fat coconut milk.
This is key for a creamy consistency. Light coconut milk will produce a more icy result. Organic full-fat coconut milk is even better!

Choose ripe, juicy lemons.
Theyโ€™ll provide the best balance of tartness and natural sweetness.

Adjust sweetness if needed.
If your lemons are very tart, you can add an extra tablespoon or two of maple syrup or honey.

Let frozen cubes soften slightly before blending.
If theyโ€™re too hard, allow them to thaw for a couple of minutes.

Add a splash of hot water if blending struggles.
This helps the cubes break down smoothly.

Add in 1 cup raw cashews or 1/2 raw cashew butter.
Not necessary, but makes the ice cream super creamy!

How to Store It

Store the ice cream in an airtight container in the freezer for up to 2 months.

Because itโ€™s made without stabilizers, it may freeze very firm. Just let it sit at room temperature for 10โ€“15 minutes before scooping.

Notes

For sweeter ice cream:
If you don’t like your desserts too tangy/bitter, cut off the lemon rinds before adding the lemons to the blender! Or simply add more maple syrup or honey.
For extra creamy ice cream:
Add 1/2 cup cashew butter or 1 cup raw cashews to the ice-cream mixture!
If you donโ€™t have a high-speed blender:
Zest the lemons and add the zest to the blender. Cut off the remaining peel, slice the lemons in half, remove any seeds, and add the lemon flesh to the blender.
If frozen cubes arenโ€™t blending well:
Allow them to thaw slightly before blending again. Adding a small splash of hot water can also help!
