Ingredients

  • 16 Medjool dates
  • 1 cup nut or seed butter (peanut, cashew, almond, sunflower seed, etc.)
  • 1/2 cup cocoa powder
  • 1/2 cup warm water

Optional Add-Ins

  • 1/2 tsp salt
  • 1 tsp pure vanilla extract
  • handful chocolate chips (I use dark or unsweetened)

Instructions

  • Soften the Dates: Start by removing the pits from the Medjool dates, then place them in a heat-safe bowl. Cover with boiling water and let them soak for 10–15 minutes, until soft. Drain thoroughly.
  • Blend the Batter: Add the soaked dates, cocoa powder, and nut butter to a food processor. Blend until the mixture begins to break down and clump together.
  • Add Water Gradually: With the food processor running, slowly pour in the warm water. Continue blending until the mixture transforms into a smooth, thick brownie batter.
  • Mix in Optional Ingredients: If using, add the salt and vanilla extract and blend briefly to combine. Fold in chocolate chips or sprinkle them over the top.
  • Prepare for Baking: Line an 8×8-inch baking dish with parchment paper. Transfer the batter to the dish and spread it evenly.
  • Bake: Bake at 350°F (175°C) for 25–30 minutes, or until the brownies are set and slightly firm to the touch.
