Chocolate Mousse Cake with Carrots

Ingredients

  • 3½–4 cups chopped organic whole carrots
  • 9 oz dark chocolate (I use dairy-free, refined sugar-free chocolate)

Instructions

  • Prepare the carrots: Wash and peel the carrots. Chop into rounds until you have about 3½–4 cups.
  • Cook until tender: Place the carrots in a pot and cover with water. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 15 minutes, or until the carrots are very soft and easily pierced with a fork.
  • Drain and cool slightly: Drain the carrots well and let them cool for a few minutes.
  • Melt the chocolate: Melt the dark chocolate using a double boiler or in the microwave in 20-second intervals, stirring between each interval until smooth.
  • Blend until silky smooth: Add the cooked carrots and melted chocolate to a high-speed blender (a food processor or immersion blender should also work). Blend until completely smooth and creamy. Scrape down the sides as needed.
  • Transfer to pan Line a loaf pan with parchment paper. Pour in the mixture and smooth the top. Optional: sprinkle with chopped dark chocolate or flaky sea salt.
  • Chill until firm Refrigerate for several hours, or until fully set and firm enough to slice.
