Chocolate Mousse Cake with Strawberries
Ingredients
- 16 oz organic strawberries (rinsed)
- 9 oz dark chocolate (I use dairy-free, refined sugar-free chocolate)
Instructions
- Slice off the tops of the strawberries then slice in half. Add to a high speed blender.
- Melt the dark chocolate, then pour it into the blender with the strawberries.
- Blend until smooth and creamy, scraping down the sides as needed.
- Pour the mixture into a parchment-lined loaf pan. Optional: line the bottom with thinly sliced strawberries and sprinkle the top with diced strawberries and/or chocolate shavings.
- Refrigerate for several hours, until fully set, then slice and serve! Store leftovers in the refrigerator.

This looks delicious but I would need a sweetener of some kind because dark chocolate is bitter – what would you suggest?
Hello! This recipe calls for sweetened dark chocolate, not unsweetened chocolate, so it is not too bitter! I like dark chocolate brands like Hu Kitchen and Navitas. But if you want to add some additional sweetener in, I would try a granulated sweetener. Coconut or date sugar could be a great option! A splash of maple syrup or honey should also be fine, but don’t add too much, as the dessert needs to set up properly in the fridge!
